Summer Hemp Salad

This summer hemp salad is perfect as a refreshing summer snack or as a healthy lunch. It is low in calories and high in fibre, meaning you feel full for longer. Serves one person.

Hemp Seed SaladThings You Will Need For This Salad:

  • 100 grams of corn
  • A large chopped tomato
  • A large chopped red onion
  • A chopped cucumber
  • 3 tablespoons of hemp seed

 

Things You Will Need For The Dressing:

  • A few crushed garlic cloves
  • 2 tablespoons of lemon juice
  • Salt
  • Hemp seeds
  • 1/2 an avocado

 

To Prepare:

  • Chop the vegetables and place them in a large bowl
  • Take the ingredients for the dressing and put them in a blender. Add a little water and blend till it is smooth
  • Pour the dressing onto the salad and mix well. Top with hemp seed. Can be served cold or as it is

Tip: You can also use hempseed oil as a salad dressing.

Refreshing Tabouli Salad

Tabouli is a Middle Eastern dish that makes a great accompaniment to a meal or as a tasty meal by itself.

Serves One Person.

Tabouli Salad Things You Will Need For This Salad:

  • 2 small bunches of parsley, Italian or curly
  • Half a diced onion
  • A sliced tomato
  • A few teaspoons of hemp seeds

 

Things You Will Need For This Dressing:

  • Lemon juice
  • Garlic cloves, crushed
  • Olive oil
  • Sea salt

 

To Prepare:

  • Chop the parsley and put it into a bowl along with the diced tomato onion and hemp seeds
  • In a blender, add the lemon juice, crushed garlic, olive oil, and sea salt and blend till the mixture is smooth
  • Pour over the salad and it is ready to be served
